Coarsely grounded yellow maize flour/ corn meal – 1 cup
Grated coconut – ½ cup
Water – As needed
Salt – To taste
Method: Add the corn meal in a pan and dry roast on low flame for 1-2 mins. Remove from flame and allow it to cool completely. Sprinkle salt. Sprinkle warm water little by little and mix well, taking care not to add too much water and to get the right consistency. When you are able to make a fist shape with the flour, it is the right consistency and ready to be cooked. Add some grated coconut in the puttu maker, followed by 1-2 handfuls of the prepared flour, followed by another layer of grated coconut, and again the flour until it reaches the top of the puttu maker. Close it with a lid and steam for 5 minutes on high flame and 10 minutes on low flame. Once the steam starts escaping from the holes of the puttu maker, remove the puttu mold. Serve delicious puttu with black tea, sugar & banana, or kadala curry.
