Bhindi Tareko / Nepali Style Okra

A simple, delicious, & fail proof stir fry that pairs well as  an accompaniment to rice or rotis!


Okra/ladies finger- 1/2kg, cleaned & sliced into half-inch rounds
Dry red chilies – 2, crushed +1 whole
Cumin/jeera seeds – 1/2 tsp
Ginger-garlic paste – 1/2 tsp
Coriander powder- 1 tsp
Turmeric powder- 1/4 tsp
Red chili powder- 1/2 tsp
Salt- To taste
Oil- As needed

Method: Marinate the okra with crushed red chilies, red chili powder, turmeric powder, & salt. Leave it aside for 10 mins. Heat oil in a pan. Splutter cumin seeds & whole dry red chili. Add the ginger-garlic paste and fry until the raw smell goes away. Add the marinated okra and mix well.  Stir fry for 5 mins. Add the coriander powder and mix well. Cover and cook for 5-10 mins until the okra becomes crisp.  Season to taste and serve as an accompaniment to rice or rotis.
