Indian Style Eggplant Lasagna

An elegant vegetable lasagna that is absolutely delicious and colorful!

 

Ingredients:
Eggplants/brinjals – 2 big ones, cut into thick rounds of about 1 cm each
Onion- 1, thinly sliced
Cumin seeds – 1 tsp
Asafoetida – A pinch
Ginger-garlic paste- 1 tsp
Green chili paste- 1 tsp
Turmeric powder- 1/2 tsp
Red chili powder- 2 tsp
Dry chili flakes – 1/2 tsp
Fennel seeds powder- 1/2 tsp
Garam masala powder- 1/2 tsp
Pepper powder – 1 tsp
Kasturi meti- 1 tsp
Greek yogurt/curd- 1/2
Mustard seeds- 1/4 tsp
Urad dal- 1/4 tsp
Dry whole chilies -2
Coriander leaves – A small bunch, finely chopped
Oil- As needed
Salt- To taste
Water- As needed

Method:  Heat 3-4 tsp of oil in a frying pan. Add the eggplants in batches and shallow fry until golden brown on both sides. Transfer the cooked brinjals into a plate. Add oil. Add the sliced onions and fry until dark brown. Transfer it into a plate. Add the cumin seeds and allow it to splutter. Add the ginger-garlic paste and green chili paste and fry for 1-2 mins until the raw smell goes away. Add the spice powders-turmeric powder, chili powder, dry chili flakes, fennel powder, garam masala powder, pepper powder, and salt. Fry for 1-2 mins. Sprinkle some water as needed, so that the spices do not get burnt. Add the kasturi meti and mix well. Remove from flame and keep aside. Heat oil in the same pan. Splutter the mustard seeds, urad dal, and whole dry chilies. Add 1/2 tsp of red chili powder and fry for 1 mins. Remove from flame. In a small bowl, whisk the yogurt adding little water and salt and keep it aside.

In an ovenproof dish, assemble the cooked brinjal in layers. Spread half of the prepared masala over the eggplant. Spread a layer of half of the fried onions followed by a layer of the curd. Repeat the layers again starting off with the brinjal. Finally, sprinkle the tadka as the final layer. Garnish with chopped coriander leaves.

Preheat the oven to 300 degrees Fahrenheit. Cover the dish with an aluminium foil. Place the dish in the oven and cook for 10 mins. Remove from oven and serve hot or cool.
