Ebelskivers / aebleskivers are Danish pancake balls originally from Denmark and can be stuffed with whatever you like. These sweet little goodies can be made as a delicious breakfast, savory appetizers, or even as desserts!
Pancake Mix – 1 cup
Milk – 1/4 cup
Chocolate, Nutella, or pistachio spread – As needed
Unsalted melted butter – As needed for brushing
Method: In a large bowl, whisk together the pancake mix, egg, and milk to form a smooth batter with lumps. Warm the chocolate spread for about 20 seconds in the microwave and keep it aside. Heat the ebleskiver pan and brush it with melted butter. Once the pan is warm, spoon about 1 tbsp of the batter into each well. Dollop about 1/2 tsp of the chocolate or pistachio spread into the center of each well. Fill it up with enough pancake batter to seal the pancakes closed. Once the surface begins to bubble, gently flip the pancakes using a fork and a spoon so that the cooked side is facing up, and cook for another 1-2 mins or the bottom turns golden brown. Repeat until all the batter is used up. Transfer the pancake balls into a plate. Serve immediately and enjoy.
