Smile like a monkey & start your day with these yummilicious banoffee pie pancakes!
All purpose flour / maida- 1.5 cups
Baking powder – 2 tsp
Sugar – 3 tsp
Milk – 1.5 cups, slightly warmed
Salt – A pinch
Vanilla extract – 1 tsp
Unsalted melted butter – 3 tbsp
Digestive biscuits – 5, crushed into coarse crumbs
Bananas – 4, peeled and sliced
Whipped cream-As needed to serve (optional)
Chocolate syrup – As needed
Method: Heat a nonstick pan and melt the butter. Toss in the digestive biscuit crumbs and sugar. Cook it until the biscuits toast and turns golden brown in color, stirring constantly. Transfer to a bowl to cool completely.
In a large bowl, whisk together the dry ingredients – the flour, sugar, baking powder, & salt. Keep it aside. In another bowl, whisk together the milk, egg, vanilla essence, & melted butter. Pour the milk mixture into the flour mixture and whisk the batter making sure not to overmix. The batter should be slightly lumpy. Heat a nonstick pan over medium heat.Grease it with melted butter. Pour a ¼ scoop of the pancake batter over the skillet. Cook for about 1-2 minutes until the bubbles form on the surface of the pancake and the edges turn golden brown. Gently slide a spatula all the way under the pancake and carefully flip to the other side. Cook for another minute or until the other side is golden brown. Repeat the process with the rest of the batter. Stack the pancakes one over the other. Top it with some banana slices, a dollop of whipped cream, chocolate syrup, and sprinkle the pie crust crumbs.
