Try this classic Thai delicacy that is truly heavenly! Grains of rice jeweled with chunks of juicy pineapple and veggies creates a taste with a tropical twist!
Pineapple – 1 cup, cut into small tidbits
Cooked rice- 3 cups
Shallots/pearl onions- 2, finely sliced
Garlic pods- 2, finely minced
Green chili-1, finely chopped
Frozen peas- 1/2 cup
Red & yellow capsicum – 1/2 cup, finely chopped
Corn kernels -1/4 cup
Carrots- 1/4 cup, finely chopped
Sausage links- 5, cooked and finely chopped
Chicken stock- 3 tbsp
Salt- To taste
Oil- As needed
Method: Heat oil in a pan. Add the shallots, garlic, & green chili and saute until translucent. Add the veggies and cook until soft & done. Once the vegetables are cooked, add the cooked sausage bits and mix well. Add the chicken stock & pineapple and combine well for 1-2 mins. Add the cooked rice and stir fry until the rice is mixed with the sauce, pineapple bits, & veggies and has a uniform color. Break up any lumps with a fork. Remove from flame. Serve hot and enjoy!
