മത്തി സുകുവും ചാള മേരിയും മണ്ണ് ചട്ടിയിൽ / Kerala Style Sardines Roast

Try this simple, yummy, &  mouth watering seafood delicacy with the sardines marinated in a delectable gravy & pan fried until crisp!

 

 

Ingredients:
Mathi / sardines- 10-12, cleaned and washed
Onions- 2, thinly sliced
Tomatoes- 2, finely chopped
Ginger-garlic paste – 2 tsp
Green chilies -3, finely chopped
Pepper powder – 3 tsp
Turmeric powder – 1/2
Chili powder – 2 tsp
Garam masala powder – 1 tsp
Mustard seeds- 1/4 tsp
Curry Leaves – 2 sprigs
Salt – To taste
Oil – As needed
Vinegar- 1 tsp

Method: Marinate the fish pieces with half of the chili powder, turmeric powder, and salt. Leave it aside for 10-15 minutes. Heat oil in a pan. Splutter the curry leaves. Add the marinated sardines over the curry leaves and fry the fish until slight brown. Drain them onto a paper towel and keep them aside. In the same pan with the remaining oil. Add the onions and saute until golden brown & translucent. Add ginger-garlic paste and fry until the raw smell goes away. Add chopped tomatoes & vinegar. Cook until the tomatoes are soft and mushy. Add pepper powder, chilly powder, turmeric powder, garam masala powder, & salt. Mix well and fry until the oil starts to separate. Add the fried fish and mix well, so that the fish gets coated well with the masala. Cover the pan and cook on low flame for 5-10 mins. Remove from flame and garnish with curry leaves. Serve with steamed rice or roti.
