Rocky Road Holidays Wreath Cake

Try this totally delicious cherry looking Holiday goodie that is packed full of crunchy nuts and marshmallows!

 

Ingredients:
Mini marshmallows – 200 g
Crushed peanuts – 1/2 cup
Caramelized pecans – 1/2 cup
Caramelized walnuts – 1/2 cup
Grated coconut – 1 cup
Red cinnamon or M&M candies – 1/2 cup
Dark chocolate wafers – 100 g
White chocolate wafers – 100 g
Butter – As needed

Method: Generously grease the bundt cake pan and keep it aside. In a large bowl, mix together the marshmallows, peanuts, pecans, walnuts, and grated coconut. Melt the dark chocolate either over a double boiler or in the microwave, taking care not to burn it. Pour the melted chocolate all over the marshmallow mixture. Combine it well and transfer to the bundt pan. Place it in the fridge to set for a few hours. Remove from fridge and allow to come to room temp. Carefully remove from the bundt tin and transfer to a serving plate. Melt the white chocolate and drizzle over the top of the wreath. Sprinkle the M&M candies using the white chocolate to ‘glue’ the candies around the wreath.
