Express Chicken Biryani

For all those busy days, when you crave for a simple biryani try this super easy & flavorful one pot rice-based dish is easy to make with a handful of aromatic spices & fresh herbs is absolutely delicious. 


Basmati rice- 2½ cups
Chicken bone-in- 1 kg, cut into small bite size pieces
Green chilies- 3, finely chopped
Ginger-garlic paste- 1 tbsp
Onion – 2, chopped
Tomato- 1, chopped
Turmeric powder- ¼ tsp
Fennel powder- 2 tsp
Garam masala- 1 tsp
Cumin seeds- 1 tsp
Whole cardamom- 2
Whole cloves- 3-4
Bay leaves- 2
Saffron- 2 pinches, soaked in 1 tbsp water
Mint Leaves- A small bunch, finely chopped
Ghee/clarified butter- 4 tbsp
Lemon juice- 1 tbsp
Yogurt- 3 tbsp
Salt- To taste
Water- As needed

Method: Clean, wash, & drain the chicken pieces. Marinate the chicken with chopped onions, green chilies, ginger-garlic paste, turmeric powder, fennel powder, garam masala, & salt. Leave it aside for 10-15 mins. Cook rice in a rice cooker along with cumin seeds, cardamom pods, cloves, bay leaves, salt, ghee, and water. Keep it aside once cooked. In a large pan, add marinated chicken and cook it covered till the chicken has cooked well. Open the lid and cook until the water is evaporated. Add the cooked rice to the chicken along with ghee and mix well. Drizzle the saffron over the rice. Garnish with chopped mint leaves. Remove from the heat and keep it covered for a few minutes. Serve warm with raita and pickle of your choice!
