Also known as “Courgettes” – Zucchini is a summer squash. These fragrant spicy little bundles of joy are a perfect teatime snack that can be prepared easily.
Zucchini- 1 large, thinly sliced lengthwise
Cornflour – 2 tbsp
All-purpose flour – 1/2 cup
Gram flour/chickpea flour/besan flour – 1/2 cup
Garam masala – 1/2 tsp
Turmeric- 1/2 tsp
Green chili sauce – 1 tsp
Ginger-garlic paste – 1 tbsp
Coriander powder- 1 tbsp
Coriander leaves – A small bunch, finely chopped
Salt – To taste
Water – As needed
Oil – As needed for frying
Method: Apply a pinch of salt to the zucchini slices and leave it aside for 5 mins. In a bowl, mix all ingredients with water as needed to form a medium thick batter. Marinate the zucchini slices with the batter and leave it aside for 10 mins. Heat oil in a deep bottomed pan, and drop the zucchini slices one by one without overcrowding the pan. Deep fry them till golden brown on both sides and cooked through. Remove the fritters using a slotted spoon and drain them on paper towel. Serve hot with cilantro chutney.
