This perfect teatime easy snack gives a feeling of fullness & lots of energy to your little ones. The caramelized banana slices are stir fried with sweet and scrambled eggs and nuts.
Ripe Plantains/nendrapazham/ethapazham : 2
Eggs – 2
Sugar- 4 tsp
Cardamom powder- A pinch
Ghee- 3 tbsp
Cashewnuts- 1 tbsp
Method: Peel & chop the plantain in medium size cubes. In a pan, add ghee & the chopped bananas and deep fry until it turns soft and golden brown. Transfer the fried plantains to a paper towel. In the same pan, add ghee and fry the cashewnuts. Drain them on a paper towel. In a bowl, mix the eggs lightly with sugar and cardamom powder using a fork.
Add the remaining ghee to the pan, pour the lightly beaten eggs and scramble using a spoon. Add in the fried plantains and mix everything together. Serve hot as a snack.
